I don’t know how much sugar I used because I eyeballed it. So, while mixing, taste it and add as much sugar as you want. 2) I suggest you to cover the sides of the springform with some parchment paper, so that it will be easier to open the springform without damaging the cake.
150 gr of cookies
50 gr of butter
200 gr of ricotta
200 ml of cream for desserts
80 ml of milk
Three juicy oranges
Three gelatin sheets (which have been previously put in a small bowl with cool water)
Base: Smash the cookies and mix them with butter. Spread it into a springform pan and let it cool in the fridge.
Cheesecake: Whip the cream until soft then add the ricotta, the grated peel of all the three oranges, one tablespoon of orange juice and as much sugar as you like.
Then melt two sheets of gelatin with boiling milk and add them into the mixture.
Pour the mixture in the springform and let it cool in the fridge.
Topping: Let boil the orange juice with some sugar until it reaches the density of hot chocolate. Add the last sheet of gelatin and let it cool a bit (not too cool, just room temperature). Pour it onto the cheesecake and put it in the fridge for at least three-four hours.
