Look good! How are they for texture? I’ve not tried any keto “breads” as I’m dubious that it’ll be any good, so I’m interested in a review! If it’s weird and crumbly like gluten free bread then I’m good without!
I completely agree, it wouldn’t make sense to eat this on a daily basis if you are trying to stick to keto. I also made this bigger than necessary so it would be easy to cut the size in half. Some almond flours have fewer carbs so you could realistically get these down to 4 net carbs or so per roll.
2 c. shredded mozzarella
4 oz. cream cheese
3 large eggs
3 c. almond flour
2 tsp. baking powder
1 tsp. kosher salt
4 tbsp. butter, melted
Preheat oven to 400° and line a baking sheet with parchment paper. In a large microwave-safe bowl, melt together mozzarella and cream cheese.
Add eggs and stir to combine then add almond flour, baking powder and salt. Form dough into 6 balls and flatten slightly then place on prepared baking sheet.
Brush with butter and sprinkle with sesame seeds and parsley. Bake until golden, 10-12 minutes.
